Liber & Co. cocktail syrups

Liber & Co.

Real-ingredient craft cocktail syrups from Austin, Texas. Proudly stocked in the UK by The Tiki Cove.

Meet Liber & Co.

Ever wondered why a Mai Tai tastes so much better at a proper cocktail bar? It is rarely just the rum. It is the syrups. The best bars make their own from fresh fruit, nuts, spices and cane sugar, and that is exactly what Liber & Co. bottle, so you can pour the same quality at home.

The Tiki Cove is one of the only UK stockists of Liber & Co. We bring their syrups over from Texas so you can get them here, without ordering from the US.

Who Are Liber & Co.?

Liber & Co. was founded in 2011 by three friends from Texas: Chris Harrison and brothers Robert and Adam Higginbotham. Back then they were on very different paths. Robert was working on Capitol Hill in Washington, D.C., Adam was finishing his degree at the University of Texas in Austin, and Chris was researching molecular genetics at the University of Kansas.

What they shared was a love of good cocktails. Visiting some of the best bars in New York, D.C. and Austin, they realised the secret behind great drinks was not just premium spirits. It was fresh juice and house-made syrups. When they tried to recreate those drinks at home, they could not find a syrup worth using. The shelves were full of artificial flavourings and high-fructose corn syrup, things no serious cocktail bar would touch.

So they made their own. It started with a single pot on a stove and a tonic syrup made from cinchona bark. Their very first customer, a cocktail bar, wrote them a cheque before Liber & Co. even had a bank account to pay it into.

By 2014 all three were back in Austin, brewing, bottling, labelling and shipping everything themselves. Today they run their own production facility in Georgetown, just north of Austin, making syrups in 1,500-gallon batches for bars, restaurants, coffee shops and home bartenders around the world. They still do almost everything in-house.

How Their Syrups Are Made

Real Ingredients

Fruit, nuts, roots, spices and real cane sugar. The Pineapple Gum Syrup is 60% cold-pressed pineapple juice, the Raspberry Gum Syrup uses ripe Washington state raspberries, and the Fiery Ginger is pressed from whole ginger root. No artificial flavours and no high-fructose corn syrup.

Bar-Quality Methods

There is no textbook for making craft cocktail syrups at scale, so the team borrowed ideas from brewers, winemakers and chocolatiers and built their own process. Their gum syrups use gum arabic, an old-school bartender’s trick for a silky, rounded texture in the glass.

Trusted Behind the Bar

Liber & Co. syrups are relied on by hundreds of drinks programmes across the US, from small craft cocktail bars to national restaurant groups, and have been featured in Esquire, Imbibe and Food & Wine.
